Ok, I have to admit it, this recipe was handed down to me and I never got a opportunity in finding out the significance of the name! Possibly, it is popular with the hunters during that particular season. The truth here is the fact of how these ingredients make such a good chicken dish to have for supper, regardless if the “hunters” who may have personalized this dish! It is a meal that goes well plus it is not too hard on your budget. Plus, attention all” speed cookers” it is a quick and easy dish to prepare. (Wink)!
Ingredients:
Serving size: four
4-Boneless Chicken Breasts *(CUT IN HALVES)
1-1lbs. package of pepper stir fry *(thaw out first in refrigerator)
1/4-tsp. Crushed Rosemary
2-Cups Sliced Mushrooms *(Fresh in Produce isle)
1/4- Cup White Wine
1-14.5oz. Can of *(garlic flavored) Diced Tomatoes)
In a large non-stick skillet, spray it with some cooking spay such as Pam. On a cutting board after the chicken is rinsed off, sprinkle the rosemary and 1/4-tsp.Salt and Pepper. Place in heated skillet, cooking until brown on each side (about 5-minutes each side), remove the chicken and set aside on a plate. Spray the same skillet with more cooking spray; cook up the package of frozen pepper stir-fry and mushrooms for 8-minutes over medium heat. Add the wine and tomatoes then boil for 1-minute, add your chicken back into skillet, cover and simmer 8-minutes and then take the cover off and simmer until the chicken is thoroughly cooked and the sauce is thickened, which is usually about 5 more minutes. Serve over hot white rice.
